We would get there Monday evening, Stay the night Monday, explore Tuesday, stay Tuesday night and then leave Wednesday morning to head back to the city.  

But if we didn't go to Tikal or I guess left Tuesday night, which I'm not sure if they would have buses....Coban is right on the way back to the city. From both Izabal and Tikal.
